Breakfast with the Kids!

Want a super easy and yummy breakfast idea? I have to tell you it is NOT quick, so if you're in a hurry stick with a bowl of fruit or cereal!
One of the girls wanted to make breakfast with me the other morning so I thought I'd take a pin from my Pinterest Board - Bacon, Egg, and Toast Cups.
Now for those who hate clicking unknown links... Like myself ;) Here is the links details. I should add that this is NOT my recipe, this is MY version of the recipe linked above.


This Recipe makes 6 Bacon, Egg, and Toast Cups

  • 3 tablespoons unsalted butter, melted
  • 8 slices white or whole-wheat sandwich bread
  • 3 slices bacon
  • 4 large eggs
  • 1/4 cup of cheese (I used Old Cheddar, but this would be delicious with anything really)
  • A splash of milk (I didn't measure I just went by what looked right. Maybe 2tbs?)
  • 1 chopped green onion (Optional, you can add other smaller veggies if you'd like)
  • Coarse salt and ground pepper

Directions

  1. Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. If you don't have a round cookie cutter than use a pizza cutter. Simply cut the crust off in a circle like shape. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
  2. In a large skillet, cook bacon over medium, throw in the onion at this point too. Cook bacon until it's almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) While the bacon is cooking combined the eggs, milk, cheese and pepper/salt. Whisk together and set aside for a moment. Take the bacon out and lay 1/2 a piece bacon in each bread cup. Throw the onions into the milk egg mixture and give it a quick whisk. Pour the mixture over the bacon and bread. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.
And that's it! Serve them up right away and dig in! These are so delicious and all seven people in our house were asking for seconds, and thirds!

You may notice there is only Five... Some went missing between the muffin tray to the plate due to "testing" ;)
